Air Fryer Ultramel Scones

Ultramel scones are a South African treat made with Ultramel custard, creating a soft and flavorful pastry. Here’s a recipe for making Ultramel scones in an air fryer:

Ingredients:

  • 2 cups self-rising flour
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, cold and cubed
  • 1 cup Ultramel custard (or any custard of your choice)
  • 1 teaspoon vanilla extract
  • Milk (for brushing)
  • Icing sugar (for dusting, optional)

Instructions:

1. Preheat the Air Fryer:

Preheat your air fryer to 350°F (180°C).

2. Mix Dry Ingredients:

In a large mixing bowl, combine the self-rising flour and granulated sugar.

3. Add Butter:

Add the cold, cubed butter to the flour mixture. Use your fingers or a pastry cutter to rub the butter into the flour until the mixture resembles coarse crumbs.

4. Incorporate Custard:

Add the Ultramel custard and vanilla extract to the mixture. Stir until just combined. Do not overmix; the dough should be soft and slightly sticky.

5. Form Scones:

Turn the dough out onto a lightly floured surface. Gently pat the dough into a circle about 1-inch thick.

Use a round cookie cutter to cut out scones from the dough.

6. Air Fry:

Place the scones in the preheated air fryer basket, leaving some space between them.

Air fry for approximately 8-10 minutes or until the scones are golden brown and cooked through.

7. Check for Doneness:

To check for doneness, insert a toothpick into the center of a scone. If it comes out clean or with a few dry crumbs, the scones are ready.

8. Brush with Milk:

Just before the scones are done, brush the tops with a little milk to give them a glossy finish.

9. Cool and Dust (Optional):

Allow the scones to cool for a few minutes before transferring them to a wire rack. If desired, dust the tops with icing sugar before serving.
