Ingredients:

- 2 tablespoons butter
- Salt and black pepper, to taste
Instructions:
1. Prepare the Grits:
- Cook the Grits: In a large pot, bring the water (or chicken broth) to a boil. Slowly stir in the grits. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally, until the grits are tender and thickened.
- Finish the Grits: Stir in the milk (or cream), cheese, and butter. Mix until creamy. Season with salt and black pepper to taste. Keep warm.
2. Prepare the Shrimp:
- Season the Shrimp: Toss shrimp with Cajun seasoning until evenly coated.
- Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add minced garlic and cook for about 30 seconds. Add shrimp and cook for 2-3 minutes per side, or until pink and opaque.
- Make the Sauce: Remove shrimp and set aside. Add chicken broth and lemon juice to the skillet, scraping up any browned bits. Simmer for 2-3 minutes until slightly reduced. Stir in butter until melted and smooth. Return shrimp to the skillet and toss to coat in the sauce.

- Spoon grits onto plates.
