Introduction

A Chocolate Confetti Roll is a sweet no-bake dessert filled with color, nostalgia, and creamy chocolate-peanut butter goodness. A twist on the classic Canadian “confetti square,” this version turns the treat into a rolled log for beautiful pinwheel-style slices. Rainbow mini marshmallows are wrapped in a rich, fudgy chocolate mixture and chilled until sliceable.

This dessert is especially popular during the holidays, on potluck trays, or as a colorful surprise for birthday parties and baby showers. It’s incredibly easy to prepare, no baking required, and keeps well in the fridge or freezer.

Ingredients

  • ½ cup (1 stick) unsalted butter

  • 1 cup semi-sweet chocolate chips

  • ½ cup creamy peanut butter

  • 1 tsp vanilla extract

  • 4 cups mini rainbow marshmallows

  • ½ cup shredded coconut (optional, for coating)

  • Parchment paper or plastic wrap (for rolling)

Equipment Needed

  • Medium saucepan or microwave-safe bowl

  • Mixing spoon or spatula

  • Large mixing bowl

  • Plastic wrap or parchment paper

  • Baking sheet or tray (for chilling)

  • Sharp knife for slicing

Instructions

Step 1: Prepare the Chocolate Mixture

  1. In a medium saucepan over low heat, melt the butter, chocolate chips, and peanut butter together. Stir constantly until smooth and glossy — about 4–5 minutes.

Alternatively, you can melt the mixture in the microwave in 30-second intervals, stirring between each.

  2. Remove from heat. Stir in the vanilla extract. Let cool for 10–15 minutes — the mixture should still be pourable but not hot, or it will melt the marshmallows.

Step 2: Add the Marshmallows

  1. Place the rainbow mini marshmallows in a large bowl.

  2. Pour the cooled chocolate mixture over the marshmallows and stir gently to coat them evenly.

Make sure the chocolate mixture is not hot — warm is fine, but too much heat will cause the marshmallows to melt or lose their color.

Step 3: Shape into a Roll

  1. Lay a large sheet of plastic wrap or parchment paper flat on your work surface.

  2. Spoon the chocolate-marshmallow mixture onto the center and shape it into a log, about 2½ inches in diameter.

  3. Wrap tightly in the plastic/parchment, rolling and shaping into a firm cylinder. Twist the ends closed like a candy wrapper.

  4. Place on a tray or baking sheet and refrigerate for at least 2–3 hours, or until fully firm.

Step 4: Slice and Serve

  1. Once chilled and set, remove the log from the fridge and unwrap it.

  2. If desired, roll the log in shredded coconut for a pretty and classic finish.

  3. Use a sharp knife to slice into ½-inch rounds. Wipe the knife between cuts for clean slices.
