Cinnamon sugar crackers

Sourdough cinnamon sugar crackers are a delightful way to use up leftover sourdough starter discard. They are crispy, slightly sweet, and perfect for snacking. Here’s a simple recipe to make them:
Sourdough Cinnamon Sugar Crackers Recipe
Ingredients:
- 1 cup (240g) sourdough starter discard (unfed)
- 1 cup (120g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Topping:
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons melted butter
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Prepare the Dough: In a large bowl, combine the sourdough starter discard, flour, sugar, oil, salt, and ground cinnamon. Mix until a smooth dough forms. If the dough is too sticky, add a little more flour until it is workable.
- Roll Out the Dough: Place the dough on a lightly floured surface and roll it out as thinly as possible, ideally 1/8 inch thick or less. Thinner dough will result in crispier crackers.
- Cut the Crackers: Using a pizza cutter or a sharp knife, cut the dough into squares or rectangles. Transfer the cut pieces to the prepared baking sheet, placing them close together but not touching.
- Prepare the Topping: In a small bowl, mix the granulated sugar and ground cinnamon. Brush the rolled-out dough with melted butter and sprinkle the cinnamon sugar mixture evenly over the top.
- Bake the Crackers: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the crackers are crisp. Keep an eye on them to prevent burning, especially towards the end of the baking time.
- Cool the Crackers: Remove the baking sheet from the oven and let the crackers cool completely on a wire rack. They will continue to crisp up as they cool.
- Store and Enjoy: Once cooled, store the sourdough cinnamon sugar crackers in an airtight container. They can be enjoyed as a snack on their own or paired with your favorite dips.
Tips:
- Even Thickness: Roll the dough as evenly as possible to ensure consistent baking and crispness.
- Storage: These crackers can be stored in an airtight container at room temperature for up to a week.
- Flavor Variations: For a different flavor, you can add a touch of vanilla extract to the dough or sprinkle some nutmeg along with the cinnamon sugar.
Enjoy your homemade sourdough cinnamon sugar crackers!
