Ingredients:
- 3 tablespoons unsalted butter
- 1 large onion, finely chopped
- 1 lb mushrooms, sliced (cremini or button mushrooms work well)
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 tablespoon Hungarian paprika
- 4 cups vegetable or chicken broth
- 2 teaspoons soy sauce
- 1 teaspoon dried dill
- Salt and black pepper to taste
- 1 cup sour cream
- 1/4 cup all-purpose flour (for the roux)
- Fresh parsley, chopped, for garnish
Instructions:
Sauté Mushrooms and Onions:
- In a large pot, melt 2 tablespoons of butter over medium heat.
- Add finely chopped onions and cook until softened.
- Add sliced mushrooms to the pot and cook until they release their moisture and become golden brown.

Make the Soup Base:
- Gradually pour in the vegetable or chicken broth, stirring constantly to avoid lumps.
- Add soy sauce, dried dill, salt, and black pepper. Bring the soup to a gentle simmer.
Thicken the Soup:
- In a small bowl, mix sour cream and 1/4 cup of flour to create a smooth mixture.
- Gradually whisk the sour cream mixture into the soup, stirring continuously.
- Continue to simmer until the soup thickens slightly.
Serve:
