Ingredients (for 4 servings):
- 1/2 cup (115g) unsalted butter
- 4 oz (115g) semi-sweet or dark chocolate (chopped)
- 1 cup (120g) powdered sugar
- 2 large eggs
- 2 large egg yolks
- 1/4 cup (30g) all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract (optional)
- Butter and cocoa powder (for greasing the ramekins)
- Optional: vanilla ice cream, whipped cream, or fresh berries for serving
Instructions:
Step 1: Preheat the Oven and Prepare Ramekins
- Preheat your oven to 425°F (220°C).
- Grease four 6-ounce ramekins with butter and dust them with cocoa powder, making sure they’re fully coated to prevent sticking.
Step 2: Melt the Butter and Chocolate
- In a medium microwave-safe bowl, combine the chopped chocolate and butter.
- Microwave in 20-30 second intervals, stirring after each interval until the mixture is completely melted and smooth.
- Alternatively, you can melt them together in a heatproof bowl over a pot of simmering water.
Step 3: Mix the Batter
- Stir the powdered sugar into the melted chocolate and butter mixture until fully combined.
- Add the eggs and egg yolks, one at a time, mixing well after each addition.
- Stir in the flour, salt, and vanilla extract (if using) until just combined. Be careful not to overmix.
Step 4: Pour Batter into Ramekins
- Divide the batter evenly among the prepared ramekins.
Step 5: Bake the Lava Cakes
- Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be set, but the center will remain soft and slightly jiggly.
- Keep an eye on the cakes after 12 minutes to ensure the centers don’t overcook.
Step 6: Serve
- Let the cakes cool for 1 minute in the ramekins.
- Run a knife around the edges of each cake, then carefully invert the ramekins onto plates. The cakes should release easily.
- Serve immediately with vanilla ice cream, whipped cream, or fresh berries.
Tips:
- Baking Time: Be sure to watch the cakes closely in the last few minutes. You want the edges set but the centers still molten.
- Make Ahead: You can prepare the batter in advance and refrigerate it in the ramekins for up to a day. Just add 1 extra minute to the baking time if the batter is chilled.
- Chocolate Choices: Use high-quality chocolate for the best flavor. You can use semi-sweet, dark, or bittersweet chocolate depending on your preference.
