Yield: 12 buns
Ingredients
-
3¾ cups (480g) all-purpose flour
-
2¼ tsp (1 packet) active dry yeast
-
⅓ cup (65g) granulated sugar
-
1 tsp salt
-
¾ cup (180 ml) whole milk, warmed (about 110°F / 43°C)
-
⅓ cup (75g) unsalted butter, softened
-
2 large eggs, room temperature
-
1½ cups gumdrops, chopped into smaller pieces
-
1 tsp vanilla extract
For brushing:
-
2 tbsp melted butter (for brushing after baking)
Instructions
Step 1: Activate the yeast
-
In a small bowl, combine warm milk and 1 tablespoon sugar.
-
Sprinkle yeast over the top and let it sit for 5–10 minutes until foamy.
Step 2: Make the dough
-
In a large bowl, whisk together flour, remaining sugar, and salt.
-
Add softened butter, eggs, vanilla extract, and the yeast mixture.
-
Stir until a soft dough forms.
-
Knead on a lightly floured surface for 8–10 minutes until smooth and elastic (or use a stand mixer with a dough hook).
Step 3: First rise
-
Place the dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled.
Step 4: Add gumdrops and shape buns
-
Punch down the dough, sprinkle chopped gumdrops evenly over it, and knead gently just to distribute the gumdrops without crushing them.
-
Divide dough into 12 equal pieces and shape each into a smooth ball.
-
Place buns on a parchment-lined baking tray, spaced evenly.
Step 5: Second rise
-
Cover buns loosely and let rise for 30–40 minutes until puffy.
Step 6: Bake
-
Preheat oven to 375°F (190°C).
-
Bake buns for 15–18 minutes or until golden brown on top.
-
Remove from oven and immediately brush with melted butter for a soft, shiny finish.
Step 7: Cool and serve
-
Let buns cool slightly on a wire rack.
-
Serve warm or at room temperature.
Tips
-
Use fresh, soft gumdrops for the best texture. Avoid gumdrops that are hard or overly sticky.
-
Be gentle when kneading in gumdrops — they can melt if overworked.
-
For a festive look, add colored sugar or a light glaze on top after baking.
