Homemade Turkey Noodle Soup

Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 medium carrots, peeled and diced

- 2 cups cooked turkey meat, shredded or diced
- 1 bay leaf
- 1 teaspoon dried thyme

- 8 oz wide egg noodles
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large soup pot or Dutch oven, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery to the pot. Sauté for about 5-7 minutes or until the vegetables are softened.
- Add the minced garlic to the pot and cook for an additional 1 minute until fragrant.
