  • Cocoa sugar (2 tbsp cocoa + 2 tbsp powdered sugar)

  • Ground walnuts mixed with sugar and cinnamon

  • Nutella or chocolate spread

  • Lemon juice + sugar for a tangy touch

 Instructions

 Step 1: Make the Batter

  1. In a mixing bowl, whisk together the eggs, milk, and sparkling water.

  2. Gradually add flour, sugar, salt, and vanilla (if using), whisking to form a smooth, lump-free batter.

  3. Stir in the melted butter.

  4. Let the batter rest for 10–15 minutes (optional but helps texture).

Batter should be thin and pourable — similar to heavy cream. If it’s too thick, add a splash of milk.

 Step 2: Cook the Pancakes

  1. Heat a non-stick or crepe pan over medium heat. Lightly grease with oil or butter.

  2. Pour about ¼ cup of batter into the pan, tilting quickly to spread it into a thin layer.

  3. Cook for 1–2 minutes, until the underside is golden and the edges start to curl.

  4. Flip carefully and cook another 30–60 seconds.

  5. Slide onto a plate and cover loosely with foil or a clean towel. Repeat with remaining batter.

You don’t need to re-grease the pan every time — only if the pancakes start sticking.

 Step 3: Fill and Roll

  1. Spread each pancake with a thin layer of filling — jam, cocoa-sugar, or cheese mixture.

  2. Roll up like a cigar or fold into quarters.

  3. Dust with powdered sugar if desired.

 Sweet Cheese Filling (Túrós Palacsinta)

This is a classic filling variation in Hungary:

  • 1 cup cottage cheese (or farmer’s cheese)

  • 2 tbsp sugar

  • 1 tsp lemon zest

  • ½ tsp vanilla extract

  • Optional: 1 tbsp sour cream

Mix all ingredients until smooth and spread over each pancake before rolling.
