Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped sun-dried tomatoes (packed in oil), drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup marinara sauce
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or olive oil.
  2. Use a sharp knife to carefully butterfly each chicken breast, creating a pocket without cutting all the way through. Season the chicken breasts with salt and pepper, both inside and outside.
  3. In a mixing bowl, combine the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, chopped fresh basil, chopped sun-dried tomatoes, and minced garlic. Mix well to form a creamy filling.
  4. Stuff each chicken breast with the prepared cheese and herb mixture, dividing it evenly among the breasts. Press the edges to seal the pockets, or use toothpicks to secure if necessary.
  5. Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for about 2-3 minutes on each side until golden brown.
  6. Transfer the seared chicken breasts to the greased baking dish. Pour marinara sauce over the chicken breasts.
  7. Cover the baking dish with foil and bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Remove the foil from the baking dish and broil the chicken breasts for an additional 2-3 minutes to brown the top slightly.
  9. Once done, remove the Italian Cream Stuffed Chicken Breasts from the oven and let them rest for a few minutes before serving.
  10. Garnish with fresh basil leaves before serving. Serve the stuffed chicken breasts with extra marinara sauce on the side and your favorite side dishes like pasta, steamed vegetables, or salad.

Note: Make sure to remove any toothpicks before serving. You can customize the filling by adding ingredients like spinach, artichoke hearts, or roasted red peppers according to your preference. Enjoy this flavorful and creamy Italian-inspired dish!
