  • 1 tablespoon melted butter or coconut oil
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for greasing the pan

Instructions:

  1. Prepare Batter:
    • In a blender or food processor, combine the eggs, softened cream cheese, almond flour, almond milk, melted butter or coconut oil, vanilla extract, and a pinch of salt. Blend until smooth and well combined. Let the batter rest for a few minutes to thicken slightly.
  2. Preheat Pan:
    • Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with butter or oil.
  3. Cook Crepes:
    • Pour a small amount of the batter (about 1/4 cup) into the heated pan, swirling it around to spread the batter evenly and create a thin crepe. Cook for about 2 minutes or until the edges start to lift and the bottom is lightly golden.
  4. Flip and Cook Other Side:
    • Carefully flip the crepe using a spatula and cook the other side for an additional 1-2 minutes until cooked through and lightly golden. Repeat with the remaining batter, greasing the pan as needed between crepes.
  5. Serve Warm:
    • Remove the cooked keto crepes from the pan and keep them warm while you cook the rest. You can stack them on a plate with parchment paper between each crepe to prevent sticking.
  6. Fill and Fold:
    • Once all the crepes are cooked, fill them with your desired keto-friendly fillings such as sugar-free whipped cream, berries, sugar-free chocolate spread, or a combination of cream cheese and stevia. Fold or roll the crepes as desired.
  7. Garnish (Optional):
    • Garnish the keto crepes with a dusting of powdered low-carb sweetener like powdered erythritol or a sprinkle of cinnamon before serving.
