  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and black pepper to taste
  • Sour cream and sliced jalapeños for serving (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Ground Meat:
    • In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if needed.
  3. Add Aromatics:
    • Add chopped onion and minced garlic to the skillet with the cooked meat. Sauté until the onion is softened.
  4. Season with Taco Mix:
    • Stir in the taco seasoning mix, tomato sauce, and water. Simmer for a few minutes until the mixture thickens and is well combined. Season with salt and black pepper to taste.
  5. Assemble in Casserole Dish:
    • Transfer the taco meat mixture to a greased 9×13-inch casserole dish, spreading it out evenly.
  6. Add Cheese:
    • Sprinkle shredded cheddar and mozzarella cheese over the taco meat.
  7. Top with Vegetables:
    • Distribute diced tomatoes and sliced black olives over the cheese layer.
  8. Bake in the Oven:
    • Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.
  9. Garnish:
    • If desired, garnish the keto taco casserole with chopped cilantro before serving.
