Broccoli & Cheddar Twice Baked Potatoes

Ingredients:
For the Twice Baked Potatoes:
- 4 large russet potatoes
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup unsalted butter, softened
- 1/4 cup milk
- 2 green onions, finely chopped
For the Broccoli Filling:
- 2 cups broccoli florets, steamed and chopped
- 1/2 cup shredded cheddar cheese
- Salt and black pepper to taste
Instructions:
Bake the Potatoes:
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes and pierce them several times with a fork.
- Rub each potato with olive oil and sprinkle with salt and pepper.
- Place the potatoes directly on the oven rack and bake for about 1 hour or until they are tender.
Prepare the Broccoli Filling:
- Steam the broccoli florets until tender, then chop them into small pieces.
- In a bowl, mix the chopped broccoli with shredded cheddar cheese. Season with salt and black pepper to taste.
Scoop Out the Potatoes:
- Allow the baked potatoes to cool for a few minutes.
- Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
Make the Potato Mash:
- Mash the scooped-out potato flesh in a bowl.
- Add shredded cheddar cheese, sour cream, softened butter, milk, and chopped green onions.
- Mix until well combined and creamy.
Assemble the Twice Baked Potatoes:
- Fold the broccoli and cheddar mixture into the mashed potatoes.
- Spoon the mixture back into the potato shells.
Bake Again:
- Place the filled potato halves on a baking sheet.
- Bake in the preheated oven for an additional 15-20 minutes or until the tops are golden brown.
Serve:
- Remove from the oven and let them cool slightly.
