Crockpot Chicken Spaghetti
Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
- 1 can (10.5 oz) Rotel diced tomatoes with green chilies
- 1 cup chicken broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 8 oz (225g) spaghetti, uncooked
- 2 cups shredded cheddar cheese (divided)
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- Fresh parsley, for garnish (optional)
Instructions:
Step 1: Prepare the Crockpot Base
- Place the chicken breasts in the bottom of your crockpot.
- Pour the cream of mushroom soup, Rotel diced tomatoes (with their juice), and chicken broth over the chicken.
- Add the garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir the mixture gently to combine.
- Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is fully cooked and tender.
Step 2: Shred the Chicken
- Once the chicken is cooked, use two forks to shred the chicken directly in the crockpot. Stir the shredded chicken into the sauce.
Step 3: Cook the Spaghetti
- About 20 minutes before serving, cook the spaghetti according to the package directions. Drain and set aside.
Step 4: Combine and Add Cheese
- Add the cooked spaghetti to the crockpot with the shredded chicken and sauce.
- Stir in the cream cheese, 1 1/2 cups of shredded cheddar cheese, and Parmesan cheese. Mix everything until the cheese is melted and well combined.
Step 5: Melt the Remaining Cheese
- Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of the spaghetti mixture in the crockpot.
- Cover and cook on LOW for an additional 10-15 minutes, or until the cheese on top is melted and bubbly.
Step 6: Serve
- Once the cheese is melted, serve the chicken spaghetti hot. Garnish with fresh parsley if desired.
