- 1 cup stout beer (like Guinness)

- 2 bay leaves

- 4 large carrots, peeled and sliced
- 4 large potatoes, peeled and diced
- Fresh parsley for garnish
Instructions:
Prep the Beef:
- In a bowl, toss the beef cubes with flour, salt, and black pepper until well coated.
Brown the Beef:
- In a large pot or Dutch oven, heat vegetable oil over medium-high heat.
- Brown the beef cubes in batches until well-seared on all sides. Remove and set aside.
Sauté Onions and Garlic:
- In the same pot, add chopped onions and minced garlic. Sauté until softened.
Deglaze the Pot:
- Pour in the beef broth and stout beer, scraping the bottom of the pot to release any browned bits.
Add Flavorings:
- Stir in tomato paste, Worcestershire sauce, sugar, bay leaves, and dried thyme.
- Return the browned beef to the pot.
Simmer:
- Bring the mixture to a simmer, then reduce the heat to low.
- Cover and simmer for 1.5 to 2 hours or until the beef is tender.
Add Vegetables:
- Add sliced carrots and diced potatoes to the pot.
- Continue simmering for an additional 30-40 minutes or until the vegetables are cooked.
Check Seasoning:
- Taste and adjust the seasoning if necessary.
Serve:
- Remove bay leaves before serving.
- Garnish with fresh parsley.
