Air Fryer Caprice Stuffed Chicken Breast

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Servings: 2

Difficulty Level: Moderate

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 slices fresh mozzarella cheese
  • 2 large tomatoes, sliced
  • Fresh basil leaves
  • Balsamic glaze for drizzling (optional)
  • Olive oil spray or cooking spray

Instructions:

  1. Preheat Air Fryer:
    • Preheat your air fryer to 375°F (190°C).
  2. Prepare Chicken Breasts:
    • Place each chicken breast between plastic wrap and use a meat mallet to pound them to an even thickness, about 1/2 inch.
  3. Season Chicken:
    • Season both sides of each chicken breast with salt, black pepper, and Italian seasoning.
  4. Assemble Caprese Filling:
    • On one half of each chicken breast, layer a slice of fresh mozzarella, tomato slices, and fresh basil leaves.
  5. Fold and Seal:
    • Fold the other half of the chicken breast over the filling to create a stuffed chicken breast. Secure with toothpicks if needed.
  6. Spray with Olive Oil:
    • Lightly spray the stuffed chicken breasts with olive oil or cooking spray to promote browning.
  7. Air Fry:
    • Place the stuffed chicken breasts in the air fryer basket, ensuring they are not touching. Cook for 20 minutes, flipping halfway through, or until the internal temperature reaches 165°F (74°C).
  8. Check for Doneness:
    • Pierce the chicken with a fork; if the juices run clear, it’s done. Make sure the cheese is melted and the chicken is cooked through.
  9. Drizzle with Balsamic Glaze (Optional):
    • If desired, drizzle the cooked chicken with balsamic glaze for extra flavor.
  10. Serve:
    • Remove toothpicks and serve the Caprese Stuffed Chicken Breast on a plate. Garnish with additional fresh basil if desired.
  11. Enjoy!
    • Enjoy this delicious and flavorful Caprese Stuffed Chicken made in the air fryer.

Note:

  • Be cautious when removing toothpicks before serving to avoid injuries.
  • Customize the seasoning and add your favorite herbs for additional flavor.
  • Serve with a side salad or roasted vegetables for a complete meal.
