Ingredients:

  • 1 cup snap peas, trimmed
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Sesame seeds and green onions for garnish (optional)

Instructions:

  1. Preheat Air Fryer:
    • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Prepare Chicken:
    • In a bowl, combine sliced chicken with soy sauce, oyster sauce, sesame oil, rice vinegar, cornstarch, grated ginger, and minced garlic. Toss until the chicken is well-coated and let it marinate for 10 minutes.
  3. Cook Chicken in Air Fryer:
    • Drizzle the marinated chicken slices with 1 tablespoon of vegetable oil and place them in the air fryer basket. Cook for 10-12 minutes, shaking the basket halfway through, until the chicken is cooked through and golden brown.
  4. Add Vegetables:
    • In a large bowl, toss the broccoli, bell pepper, carrot, and snap peas with 1 tablespoon of vegetable oil.
  5. Combine Chicken and Vegetables:
    • Add the seasoned vegetables to the air fryer basket with the cooked chicken. Toss everything together.
  6. Continue Cooking:
    • Air fry for an additional 5 minutes or until the vegetables are tender-crisp and slightly charred.
  7. Garnish and Serve:
    • Garnish with sesame seeds and chopped green onions if desired. Serve the stir fry over rice or noodles.
