Ingredients:

For Carne Asada:

  • 2 pounds flank steak or skirt steak
  • Juice of 2 limes
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil

For Chile Verde Sauce:

  • 1 pound tomatillos, husks removed and washed
  • 2 medium-sized poblano peppers, seeded and chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil

Additional Toppings:

  • Fresh cilantro, chopped
  • Lime wedges
  • Corn or flour tortillas

Instructions:

For Carne Asada:

  1. Marinate Steak:
    • In a bowl, combine lime juice, minced garlic, ground cumin, chili powder, salt, black pepper, and vegetable oil. Place the steak in a shallow dish and pour the marinade over it. Marinate for at least 30 minutes, turning the steak occasionally.
  2. Preheat Grill or Skillet:
    • Preheat your grill or a skillet over medium-high heat.
  3. Grill Steak:
    • Grill the marinated steak for 4-6 minutes per side or until it reaches your desired level of doneness. Let it rest for a few minutes before slicing thinly against the grain.

For Chile Verde Sauce:

  1. Roast Tomatillos and Poblanos:
    • Preheat the broiler. Place tomatillos and poblano peppers on a baking sheet. Broil for 5-7 minutes, turning occasionally, until the skin is charred and blistered.
  2. Blend Sauce:
    • In a blender, combine roasted tomatillos, poblanos, chopped onion, minced garlic, chicken broth, ground cumin, dried oregano, salt, and black pepper. Blend until smooth.
  3. Cook Sauce:
    • In a saucepan, heat vegetable oil over medium heat. Pour in the blended sauce and simmer for 15-20 minutes, stirring occasionally, until the sauce thickens.

Assembling:

  1. Serve:
    • Arrange the sliced carne asada on a serving platter. Pour the chile verde sauce over the top.
  2. Garnish:
    • Garnish with chopped fresh cilantro. Serve with lime wedges and warm tortillas.
  3. Enjoy!

Note:

  • Adjust the level of spiciness by adding more or fewer poblano peppers.
