Instructions:

  1. Preheat Oven:

  2. Prepare Potatoes:

  3. Bake Potatoes:
    • Rub the potatoes with olive oil and sprinkle them with salt and pepper. Place them directly on the oven rack and bake for about 40 minutes or until they are tender when pierced with a fork.
  4. Cool and Halve Potatoes:
    • Remove the baked potatoes from the oven and let them cool slightly until they are safe to handle. Cut each potato in half lengthwise.
  5. Scoop Out Flesh:
    • Use a spoon to carefully scoop out the flesh from each potato half, leaving a thin layer of potato attached to the skin. Reserve the scooped-out potato for another use (like mashed potatoes).
  6. Crisp the Skins:
    • Increase the oven temperature to 450°F (230°C). Place the hollowed-out potato skins on a baking sheet, skin side down. Brush the skins with a bit more olive oil and bake for about 10 minutes or until they are crispy and golden brown.
  7. Add Fillings:
    • Remove the crispy potato skins from the oven and sprinkle each with shredded cheddar cheese and crumbled bacon. Return them to the oven for another 2-3 minutes or until the cheese is melted and bubbly.
  8. Garnish and Serve:
    • Remove the potato skins from the oven and sprinkle them with chopped green onions, if desired. Serve hot with a side of sour cream for dipping.
